Ingredients
  

For the Potatoes

  • 4 medium russet potatoes
  • 2 tablespoons olive oil for rubbing on potatoes

  • 1 medium onion, diced (about 1 cup)
  • 1 medium jalapeño pepper, diced
  • 1 pound lean ground turkey

  • 2 tablespoons light brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon hot sauce (more to taste)
  • 1 teaspoon Dijon mustard
  • 1 cup shredded sharp cheddar cheese for topping

Preparation

  • Scrub the russet potatoes under cold water. Pierce several holes in each potato with a sharp knife.

Seasoning and Baking the Potatoes

  • Rub the potatoes generously with olive oil and season with kosher salt and fresh ground pepper.
  • Place the seasoned potatoes directly on the rack in a preheated oven at 375°F (190°C). Bake for 30 minutes, flipping them halfway through.

Sautéing the Vegetables

  • While the potatoes are baking, heat a large sauté pan over medium-high heat. Add the salted butter, and when it melts, toss in the diced onion and jalapeño. Sauté for 6 to 8 minutes until tender.

Cooking the Turkey

  • Add the ground turkey to the pan and break it up as it cooks until it's no longer pink, about 5 to 7 minutes.

Making the Sloppy Joe Mixture

  • Stir in the ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, hot sauce, and Dijon mustard. Let it simmer for another 5 minutes.

Fluff and Fill the Potatoes

  • Once the potatoes are done, remove them from the oven and slice them open. Fluff the insides with a fork.
  • Divide the turkey mixture evenly among the four baked potatoes.

Final Assembly

  • Top each filled potato with shredded cheddar cheese. Return to the oven and bake for 5 to 10 minutes until the cheese is melted and bubbly.
