Ingredients
  

Turkey Stroganoff

  • 1 lb ground turkey
  • 2 cups mushrooms sliced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 cup chicken broth
  • 1 tbsp Dijon mustard
  • 0.75 cup sour cream
  • salt and pepper to taste
  • fresh parsley for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add onion and mushrooms; sauté until softened.
  • Add garlic and ground turkey, cooking until turkey is browned.
  • Pour in chicken broth and stir in Dijon mustard. Simmer for 5–7 minutes.
  • Reduce heat and stir in sour cream until sauce is creamy.
  • Season with salt and pepper to taste.
  • Serve warm over egg noodles, rice, or mashed potatoes. Garnish with parsley.

Notes

For extra richness, add a splash of cream or sprinkle with paprika before serving.
