  • 4 pieces eggs
  • 2 pieces tomatoes, diced
  • 1 piece onion, chopped
  • 2 pieces green peppers, chopped
  • 2 tablespoons olive oil Can substitute with any neutral oil
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste

Preparation

  • Pour 2 tablespoons of olive oil into a medium-sized pan over medium heat and allow to warm.
  • Add 1 chopped onion to the oil and sauté until translucent, about 3-4 minutes.
  • Stir in 2 diced tomatoes and cook until softened, around 5 minutes.
  • Add 2 chopped green peppers and continue cooking until tender, about another 5 minutes.
  • In a bowl, crack 4 eggs and mix in 1 teaspoon of paprika along with salt and black pepper. Whisk until combined.
  • Pour the egg mixture into the pan with the sautéed vegetables and gently stir with a spatula.
  • Cook the mixture for about 4-5 minutes until the eggs are just set but still moist.
  • Remove from heat and garnish with fresh herbs if desired before serving.
  • Enjoy your Turkish Eggs warm!

Notes

Can store leftovers in an airtight container for 3-4 days. Reheat gently to avoid a rubbery texture.
