Ingredients
  

  • 3 fillets salmon about 1 pound total
  • 1 tsp kosher salt
  • ½ tsp black pepper freshly ground
  • 1 tbsp extra-virgin olive oil
  • ½ white onion diced
  • ½ cup sun-dried tomatoes in oil chopped
  • ½ cup cherry tomatoes halved
  • 1 tbsp garlic minced
  • 1 cup heavy cream
  • ½ cup Parmesan cheese freshly shredded
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1 cup baby spinach fresh

Instructions
 

  • Prep ingredients: dice onion and garlic, chop sun-dried tomatoes, halve cherry tomatoes, rinse spinach.
  • Pat salmon dry. Season with salt and black pepper on both sides.
  • Heat olive oil in a large skillet over medium-high heat. Sear salmon for 3-4 minutes per side until golden. Remove and set aside.
  • In the same skillet, sauté onion for 2 minutes. Add sun-dried tomatoes, cherry tomatoes, and garlic. Cook 3-5 minutes.
  • Pour in heavy cream. Stir in Parmesan, paprika, and Italian seasoning. Simmer for 3 minutes.
  • Add spinach and cook until wilted.
  • Return salmon to skillet. Spoon sauce over salmon and cook 2 more minutes. Serve hot.

Notes

Serve with pasta, rice, or fresh salad. Substitute coconut cream for a dairy-free version.
