Ingredients

Cookie Dough Ingredients

  • 2 cups all-purpose flour For gluten-free, replace with a gluten-free blend.
  • 1 cup unsalted butter Must be softened.
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons almond extract
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Icing Ingredients

  • 1 cup powdered sugar For the icing.
  • 2 tablespoons milk Or water for icing.
  • 1 teaspoon almond extract For the icing.
  • Zest of 1 lemon Optional for added zest.

Instructions

Preparation

  • Gather all your ingredients to streamline the baking process. Preheat your oven to 350°F (175°C).

Make the Dough

  • In a large mixing bowl, blend the softened butter and granulated sugar until creamy and light for 2-3 minutes.
  • Add in the eggs one at a time, continuing to beat after each addition. Incorporate the vanilla and almond extracts until combined.

Combine Dry Ingredients

  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this mix to the wet ingredients, mixing just until combined.

Shape the Cookies

  • Flour your work surface and take small portions of the dough. Roll each portion into a log about 6 inches long, then twist each log spirally.
  • Place each twisted cookie on a parchment-lined baking sheet, leaving space between them.

Bake the Cookies

  • Bake for 10-12 minutes, or until the edges are lightly golden and the centers appear soft.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Prepare the Icing

  • In a small bowl, whisk together powdered sugar, milk, and almond extract until smooth. Adjust consistency as needed.

Ice the Cookies

  • Once the cookies are fully cooled, drizzle the icing over each cookie using a fork or piping bag.
  • Optionally, sprinkle lemon zest over the iced cookies.

Set and Serve

  • Allow the icing to set for about 30 minutes before serving.
  • Serve on a festive plate, perfect for sharing with family and friends.
