  • 200 g udon noodles
  • 200 g chicken breast, sliced
  • 2 tablespoons peanut butter
  • 1 tablespoon soy sauce low-sodium option can be used
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced can roast for a sweeter flavor
  • 1 tablespoon honey substitute with maple syrup for vegan
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Preparation

  • Gather all your ingredients. Slice the chicken breast into thin strips and finely mince the garlic. Chop the green onions for garnish.

Cooking

  • Boil water in a large pot and add the udon noodles. Cook according to package instructions, usually around 8–12 minutes. Once cooked, drain and set aside.
  • In a pan over medium heat, add the sesame oil. When hot, place the sliced chicken into the pan. Cook for about 5–7 minutes or until the chicken is golden and cooked through.
  • While the chicken is cooking, grab a bowl and mix together peanut butter, soy sauce, rice vinegar, minced garlic, and honey. Stir until smooth. Taste and adjust seasoning as needed.
  • Once the chicken is cooked, add the drained udon noodles directly into the pan, mixing thoroughly to combine.
  • Pour the prepared peanut dressing over the chicken and noodles. Toss everything together to coat evenly.
  • Season your dish with salt and pepper according to your preference. Mix again to incorporate the seasoning.
  • Finally, garnish with the sliced green onions and serve immediately while hot.

Serving Suggestions

  • Consider serving with steamed vegetables like broccoli, bok choy, or snap peas, and a simple green salad.
  • For added freshness, slices of lime or lemon can enhance the dish.

Notes

Customize with your choice of vegetables or proteins. For vegan, substitute chicken with tofu or tempeh and honey with agave nectar.
