  • 12 large eggs
  • 2 cups milk Almond or oat milk can be used for a dairy-free option.
  • 1 cup shredded cheddar cheese Other cheeses can also be substituted.
  • 1 cup diced ham Can be substituted with turkey sausage or omitted for vegetarian.
  • 1 cup chopped bell peppers
  • 1 cup chopped spinach Can be replaced with other greens.
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Whisk together the eggs and milk in a large bowl until well combined.
  • Add shredded cheese, diced ham, bell peppers, and spinach. Mix well.
  • Season with salt, black pepper, and garlic powder, and mix again.
  • Grease a 9x13 inch baking dish and pour the mixture into it, spreading evenly.

Cooking

  • Bake in the preheated oven for 30-35 minutes, until golden and set.
  • Allow to cool for 5 minutes before slicing.
  • Serve warm.

Notes

This dish can be prepared a day in advance and baked fresh on Christmas morning. Leftovers can be stored in the fridge for 3-4 days or frozen for longer storage.
