  • 1 can black-eyed peas, drained and rinsed

  • 1 cup cherry tomatoes, halved
  • 1 unit bell pepper, diced
  • ¼ cup red onion, diced
  • ¼ cup cilantro, chopped

  • 2 unit limes, juiced
  • 2 tablespoons olive oil

Preparation

  • Gather all your ingredients. Rinse and drain the black beans and black-eyed peas thoroughly. Dice the avocados and bell pepper, halve the cherry tomatoes, and finely chop the red onion and cilantro.

Combining Ingredients

  • In a large mixing bowl, combine the black beans, black-eyed peas, sweet corn, diced avocados, halved cherry tomatoes, diced bell pepper, red onion, and chopped cilantro. Mix gently with a spatula.

Dressing Preparation

  • In a separate bowl, whisk together the lime juice, olive oil, and a sprinkle of salt and pepper.

Mixing

  • Pour the dressing over the bean and vegetable mixture, ensuring everything is coated without mashing the ingredients. Then carefully toss until combined.
