Ingredients
  

  • 1 lb ground beef browned and drained
  • 1 onion chopped
  • 2 cups cooked pasta such as elbow macaroni
  • 1 can (15 oz) diced tomatoes
  • 1 cup sour cream
  • 1 cup cheddar cheese shredded
  • 1 cup pickles chopped
  • 1 tbsp mustard
  • 1 tbsp ketchup
  • salt and pepper to taste
  • 1 cup corn chips crushed, optional for topping

Instructions
 

  • Preheat oven to 350°F (175°C). Lightly grease a baking dish.
  • In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onions are soft. Drain excess fat.
  • In a large bowl, combine cooked pasta, diced tomatoes, sour cream, cheddar cheese, pickles, mustard, and ketchup. Mix well.
  • Add the cooked beef and onions to the pasta mixture. Stir until evenly combined. Season with salt and pepper to taste.
  • Transfer mixture to the prepared baking dish and smooth the top.
  • Sprinkle crushed corn chips over the top, if desired.
  • Bake for 25–30 minutes, or until hot and bubbly with melted cheese.
  • Remove from oven, let cool slightly, then serve warm.

Notes

To add more flavor, try mixing in crispy bacon bits, sautéed peppers, or a dash of smoked paprika. For a spicier twist, add buffalo sauce or jalapeños. Leftovers store well in the fridge for up to 3 days or can be frozen for 3 months.
