Ingredients

  • 3-4 lbs chuck roast
  • 1 onion chopped
  • 4 cloves garlic minced
  • 4 carrots sliced
  • 4 potatoes quartered
  • 1 cup beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tsp thyme
  • salt and pepper to taste

Instructions
 

  • Chop the onion and mince the garlic to create a flavorful base.
  • Place the onion and garlic at the bottom of the crockpot.
  • Season the chuck roast with salt and pepper, then place it on top of the onion and garlic.
  • Arrange sliced carrots and quartered potatoes around the roast.
  • In a bowl, mix beef broth, Worcestershire sauce, soy sauce, and thyme.
  • Pour the sauce mixture over the roast and vegetables.
  • Cover the crockpot and cook on low for 8–10 hours or on high for 4–5 hours.
  • Check for tenderness—roast should be fork-tender and easy to shred.
  • Serve hot with vegetables and enjoy your hearty meal!

Notes

For enhanced flavor, sear the roast in a hot pan before slow cooking. You can also customize with seasonal vegetables or gluten-free sauces. Leftovers keep well for 3–4 days in the fridge or up to 3 months in the freezer.
