Ingredients
  

Skillet Mixture

  • 1 lb ground beef
  • 3 bell peppers chopped
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 cup uncooked white rice
  • 2 cups beef broth
  • 425 g crushed tomatoes 1 can
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • salt and pepper to taste
  • 1 cup shredded mozzarella cheese optional

Instructions
 

  • Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks.
  • Add the diced onion and cook for 2–3 minutes until softened. Stir in the minced garlic and cook for 30 seconds.
  • Add chopped bell peppers, uncooked rice, beef broth, crushed tomatoes, paprika, Italian seasoning, salt, and pepper. Stir to combine.
  • Bring to a gentle simmer, cover, and cook for 18–20 minutes, stirring occasionally, until the rice is tender.
  • If using cheese, sprinkle mozzarella over the top, cover, and cook for 2–3 minutes until melted.
  • Remove from heat and rest for a few minutes before serving.

Notes

This recipe works well with ground turkey or chicken. Brown rice can be substituted but will need extra liquid and cooking time.
