Ingredients
  

  • 1 lb shrimp peeled and deveined
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 1 avocado diced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice freshly squeezed
  • salt and pepper to taste
  • fresh herbs parsley or cilantro, for garnish

Instructions
 

  • Prepare all ingredients. Peel and devein shrimp, wash and dry salad greens.
  • Bring salted water to a boil and cook shrimp until pink and opaque, about 2–3 minutes. Drain and let cool.
  • In a large salad bowl, combine greens, cherry tomatoes, cucumber, and diced avocado.
  • Whisk olive oil, lemon juice, salt, and pepper together in a small bowl to make the dressing.
  • Add cooled shrimp to the salad bowl and drizzle with the dressing.
  • Toss gently with tongs to mix without bruising the greens.
  • Garnish with fresh herbs and serve immediately.

Notes

For a tropical twist, add diced mango or pineapple. For a Mediterranean variation, include feta cheese and olives. Store leftovers in separate airtight containers for up to 2 days in the refrigerator.
