Instructions
 

Preparation

  • Gather all your ingredients, ensuring everything is readily accessible. Measure out your flour, sugar, and other items.
  • Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

Making the batter

  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy—about 2-3 minutes.
  • Carefully add the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla extract until fully combined.
  • In a separate bowl, combine the flour, baking powder, and salt, then whisk together.
  • Gradually add the flour mixture to the creamed mixture, alternating with the milk, and mix until just combined.

Baking

  • Pour the batter evenly into the prepared pans. Bake for 25-30 minutes.
  • Insert a toothpick into the center; if it comes out clean, the cake is done.

Cooling and assembly

  • Once baked, allow the cakes to cool in the pans for about 10 minutes, then transfer to wire racks to cool completely.
  • Level the tops of the cakes if necessary for even layering.
  • Place one layer of the cake on a serving platter, spread frosting, and add the second layer. Frost the top and sides before chilling for 30 minutes.

Decoration

  • Roll out the fondant and cover the chilled cake, smoothing it to remove air bubbles.
  • Use food coloring and edible glitter to decorate as desired.

Notes

For a chocolate version, substitute some flour with cocoa powder. Allow cakes to cool completely before frosting to avoid melting.
