  • Start by gathering all your ingredients. Rinse the quinoa under cold water, dice the bell pepper, and mince the garlic.

Cooking

  • In a saucepan, combine quinoa with double the amount of water. Bring to a boil, then reduce to a simmer for about 15 minutes or until the water is absorbed and quinoa is fluffy.
  • In a separate pan, heat olive oil over medium heat. Add minced garlic and diced bell pepper. Sauté for about 5 minutes until the bell pepper is tender.
  • Add the fresh spinach to the sautéed vegetables. Stir until wilted, which should take about 2-3 minutes.
  • Once the quinoa is cooked, fluff it with a fork and add it to the vegetable mixture. Toss to combine evenly, adding salt, pepper, and oregano for flavor.
  • Gently fold in the crumbled feta cheese.
  • Squeeze fresh lemon juice over the dish and toss to ensure all ingredients are coated.

  • Scoop the mixture into bowls and garnish with fresh basil leaves.
