Preparation

  • Start by gathering all your ingredients and ensuring your butter is softened to room temperature.
  • Puree your fresh strawberries beforehand.

Mixing

  • In a bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
  • Add the egg and vanilla extract, mixing until fully incorporated.
  • In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  • Gradually add the dry mixture to the butter and sugar mixture, mixing only until just combined.
  • Gently fold in the strawberry puree.

Baking

  • Line a baking sheet with parchment paper.
  • Using a tablespoon, drop spoonfuls of dough onto the prepared baking sheet, spaced about two inches apart.
  • Bake in a preheated oven at 350°F (175°C) for 12-15 minutes or until edges are lightly golden.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. Can be frozen for longer storage.
