Ingredients
  

Cookie Dough

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • ½ cup cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 cup chocolate chips
  • 1 cup diced strawberries fresh, patted dry

Chocolate Coating

  • 8 oz chocolate melted for dipping (milk, dark, or white)

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together softened butter and sugar until light and fluffy, about 2–3 minutes.
  • Add eggs one at a time, then mix in vanilla extract until smooth.
  • In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
  • Gradually add dry ingredients to the wet mixture, stirring until combined. Do not overmix.
  • Fold in chocolate chips and diced strawberries gently until evenly distributed.
  • Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10–12 minutes, or until cookies are set but still soft in the center. Let cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
  • Melt chocolate in a microwave or double boiler. Dip each cooled cookie halfway into the melted chocolate, letting excess drip off. Place on parchment paper and allow to set before serving.

Notes

Ensure strawberries are completely dry before adding to the dough to prevent excess moisture. For added flair, drizzle white chocolate over the dark coating or sprinkle crushed freeze-dried strawberries on top. Store cookies in an airtight container at room temperature for up to 5 days or refrigerate for a longer shelf life.
