Ingredients

  • 2 tablespoons sugar
  • 1 tablespoon baking powder

  • 2 large eggs For egg-free, use a flaxseed egg substitute.
  • 2 tablespoons unsalted butter, melted Can substitute with dairy-free butter.
  • 1 teaspoon vanilla extract

For Frying and Topping

  • Vegetable oil for frying Approximately 2-3 inches deep in pot.
  • Powdered sugar For dusting.

Preparation

  • Gather all your ingredients and equipment, including a large bowl, whisk, measuring cups, a spatula, a deep fryer or large pot, and a thermometer.

Mixing Dry Ingredients

  • In a large mixing bowl, combine the flour, sugar, baking powder, and salt with a whisk until well blended.

Whisking Wet Ingredients

  • In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract until smooth.

Combining Ingredients

  • Pour the wet mixture into the dry ingredients and gently mix until just combined. Avoid overmixing.

Heating the Oil

  • In a deep fryer or large pot, pour enough vegetable oil to submerge the beignets about 2-3 inches deep and heat it to 375°F (190°C).

Frying Beignets

  • Drop tablespoons of the batter into the hot oil without overcrowding. Fry until golden brown on all sides, about 2-3 minutes.

Draining and Cooling

  • Remove beignets from the oil with a slotted spoon and let the excess oil drip off on paper towels.

Dusting and Serving

  • Dust the warm beignets generously with powdered sugar and serve immediately.
