Preparation

  • Gather all your ingredients before you start. This preparation eases the process and ensures you have everything ready.
  • In a mixing bowl, whip the heavy cream until soft peaks form. Avoid over-whipping.
  • In a separate bowl, beat the softened butter until creamy and smooth, about 2-3 minutes.
  • Add vanilla extract and granulated sugar to the beaten butter and mix until smooth.
  • In a saucepan, gently heat cold water and add gelatin, stirring until dissolved. Do not let it boil.
  • Allow the dissolved gelatin to cool slightly before adding it to the butter mixture.
  • Gradually incorporate the melted gelatin into the butter mixture, ensuring an even mix.
  • Gently fold in the whipped cream until well combined, being careful not to deflate the mixture.
  • Transfer the filling to a bowl, cover, and chill in the refrigerator for at least 2 hours until set.
  • Once set, use the Vanilla Mousse Cake Filling between cake layers or as a standalone dessert.

Notes

Store filling in an airtight container in the refrigerator for up to 5 days. Can be frozen for up to a month; thaw overnight in the fridge before use. Avoid over-whipping the cream and ensure the gelatin is not hot when adding to the butter mixture.
