Calzone Dough

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • ½ cup warm water

Calzone Filling

  • 1 cup spinach, chopped
  • 1 cup mushrooms, sliced
  • ½ cup onion, diced
  • 1 cup vegan cheese Dairy-free alternative
  • 1 teaspoon Italian seasoning
  • 1 tablespoon nutritional yeast

Preparation

  • Start by gathering all your ingredients.
  • Chop the spinach, slice the mushrooms, and dice the onion.

Making the Dough

  • In a large mixing bowl, combine the flour and salt.
  • Add the olive oil and warm water to the dry mixture and mix until dough forms.
  • Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.
  • Cover the dough with a kitchen towel and let it rest for 30 minutes.

Preparing the Filling

  • Sauté the spinach, mushrooms, and onions in a pan over medium heat for about 5-7 minutes until soft.
  • Mix in vegan cheese, Italian seasoning, and nutritional yeast to create the filling.

Assembling and Baking

  • Divide the dough into portions and roll each into a circle about 6-8 inches in diameter.
  • Spoon the filling onto half of each dough circle and fold over, sealing the edges.
  • Place calzones on a baking sheet lined with parchment paper and bake at 400°F (200°C) for 20-25 minutes until golden brown.

Notes

For added flavor, brush the tops with olive oil before baking, and serve with marinara sauce for dipping.
