Ingredients
  

Pastry Base

  • 2 sheets sheets of puff pastry (ensure they’re vegan)
  • 30 g caster or granulated sugar
  • 2 heaped teaspoons ground cinnamon or sweet cinnamon
  • 4 large apples (Granny Smith or Honeycrisp work great!)
  • as needed Dairy-free milk (for brushing the pastries)
  • as needed Vegan caramel sauce (optional, for drizzling)

Instructions
 

Preparation

  • Clear your workspace and gather all your ingredients.
  • Preheat your oven to 200°C (392°F).
  • Line a baking tray with parchment paper.

Prepare the Base

  • Roll out the puff pastry on a lightly floured surface.
  • Cut the pastry into squares or rectangles (about 10cm x 10cm).
  • Keep the pastry cold until ready to fill and bake.

Make the Filling

  • Peel, core, and chop the apples into small cubes.
  • Combine apple cubes, caster sugar, and ground cinnamon in a mixing bowl.
  • Let the mixture sit for about 10 minutes to draw out the apple juices.

Assemble the Pastries

  • Place about a tablespoon of filling in the center of each pastry square.
  • Drizzle vegan caramel sauce over the filling if desired.
  • Fold the pastry over to create a triangle or rectangle and press edges to seal.

Bake

  • Brush the top of each pastry with dairy-free milk.
  • Place the filled pastries on the baking tray and bake for 20-25 minutes until golden brown.
  • Allow the pastries to cool on a wire rack for about 5-10 minutes.

Serve

  • Drizzle with additional vegan caramel sauce before serving.
  • Enjoy with a scoop of dairy-free ice cream if desired.

Notes

Store in an airtight container for up to 3 days or freeze unbaked pastries for up to 2 months.
