  • Start by gathering all your ingredients. Chop the onion, dice the carrots and celery, and mince the garlic for easy access.
  • In a large pot, heat a splash of oil over medium heat. Once hot, add your chopped onion, diced carrots, and celery. Sauté these veggies until they’re softened, which usually takes about 5-7 minutes.

Cooking

  • Stir in the minced garlic, thyme, and oregano. Allow these ingredients to cook for another minute until fragrant, stirring frequently to prevent burning.
  • Pour in the vegetable broth and increase the heat to bring everything to a gentle boil.
  • Once boiling, add your choice of noodles and the cooked chickpeas. Stir well to combine everything, ensuring that the noodles are fully submerged in the broth.
  • Reduce the heat to a simmer and allow the soup to cook according to the noodle package instructions, stirring occasionally to prevent sticking.
