Preparation

  • Start by washing the russet potatoes thoroughly. Cut them into fry shapes, ensuring even sizes for consistent cooking.

Cooking the Fries

  • Toss the cut potatoes with olive oil and salt. Spread them out on a baking sheet, placing them in a preheated oven at 425°F (220°C). Bake for 30-35 minutes, turning halfway, until they are golden and crispy.

Sautéing Aromatics

  • While the fries are baking, heat a splash of olive oil in a pan. Add diced onions and minced garlic, cooking until the onions are translucent—about 5 minutes.

Adding the Chili Ingredients

  • Stir in the black beans, kidney beans, corn, and canned diced tomatoes. Sprinkle in chili powder, cumin, and salt, stirring well to combine. Allow the mixture to cook on medium heat for 10 minutes, letting the flavors meld.

Assembling the Fries

  • Once the fries are crispy, take them out of the oven. Layer the chili mixture generously over the fries, ensuring even coverage.

Melting the Cheese

  • Sprinkle vegan cheese shreds over the chili. Pop the entire baking sheet back into the oven for another 5 minutes. You’ll want to remove it once the cheese is melty and bubbly.

Garnishing and Serving

  • After pulling the dish from the oven, consider adding fresh cilantro, avocado slices, or jalapeños for added flavor.

Notes

To store leftovers, wait until they cool completely. Transfer to an airtight container and keep in the refrigerator for up to three days. Reheat in the oven for best texture.
