  • ½ cup cocoa powder
  • ½ cup powdered sugar
  • ½ cup walnuts or mixed nuts (chopped)
  • ¼ cup almond milk or plant-based milk
  • 1 teaspoon vanilla extract
  • a pinch salt

Preparation

  • Gather all your ingredients and tools, ensuring you have everything ready to go.
  • Crush the digestive biscuits or graham crackers into fine crumbs using a food processor or a ziplock bag and rolling pin.
  • In a mixing bowl, combine the crushed biscuits, cocoa powder, powdered sugar, and chopped nuts.
  • In a separate bowl, mix the almond milk, vanilla extract, and a pinch of salt.
  • Pour the wet ingredients into the dry ingredients, and mix until fully integrated.
  • Scoop the mixture onto a piece of plastic wrap, shape it into a log form, and roll it tightly.
  • Refrigerate the log for at least 2 hours to firm up.
  • Once chilled, remove the log from the wrap and roll it in coconut flakes or cocoa powder if desired.
  • Slice into thick pieces using a sharp knife and serve chilled.

Notes

Vegan Chocolate Salami can be customized with various nuts or spices. Store in an airtight container in the fridge for up to a week. Can be frozen for longer shelf life.
