Ingredients
  

Caramel

  • 1 cup sugar
  • ¼ cup water

Flan Mixture

  • 1 can full-fat coconut milk 13.5 oz
  • 1 cup almond milk
  • ½ cup sugar
  • 3 tbsp cornstarch
  • 1 tsp vanilla extract
  • pinch of salt

Instructions
 

  • In a small pot, heat sugar and water over medium heat without stirring until it becomes golden caramel.
  • Quickly pour the caramel into the bottom of your baking dish and spread by tilting the dish.
  • In another pot, combine coconut milk, almond milk, sugar, cornstarch, vanilla, and salt. Whisk well.
  • Cook over medium heat, stirring constantly, until the mixture thickens and becomes smooth.
  • Pour the mixture over the caramel and smooth the top.
  • Bake in a water bath at 325°F (160°C) for 45 minutes.
  • Cool completely, then refrigerate for at least 2 hours before unmolding.

Notes

For a deeper flavor, add a pinch of turmeric for natural color or a splash of maple syrup.
