Caramel

Flan Mixture

full-fat coconut milk

almond milk

Instructions
In a small pot, heat sugar and water over medium heat without stirring until it becomes golden caramel.
Quickly pour the caramel into the bottom of your baking dish and spread by tilting the dish.
In another pot, combine coconut milk, almond milk, sugar, cornstarch, vanilla, and salt. Whisk well.
Cook over medium heat, stirring constantly, until the mixture thickens and becomes smooth.
Pour the mixture over the caramel and smooth the top.
Bake in a water bath at 325°F (160°C) for 45 minutes.
Cool completely, then refrigerate for at least 2 hours before unmolding.
Notes
For a deeper flavor, add a pinch of turmeric for natural color or a splash of maple syrup.
