  • 8 pieces lasagna noodles Choose your favorite type, whether traditional or gluten-free.
  • 2 cups spinach Fresh or frozen, packed with nutrients.
  • 1 cup ricotta made from tofu Creamy vegan alternative to conventional cheeses.
  • 1 cup marinara sauce Your favorite brand or homemade, for rich flavor.
  • ½ cup nutritional yeast Adds a cheesy flavor while providing B vitamins.
  • 1 teaspoon garlic powder For that aromatic punch.
  • 1 teaspoon onion powder Enhances taste without the bulk of fresh onions.
  • to taste salt Always adjust to your preference.
  • to taste pepper Freshly ground black pepper adds a nice kick.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Gather all your ingredients.
  • Boil lasagna noodles according to package instructions until al dente. Drain and set aside to cool slightly.
  • In a medium bowl, combine the spinach, tofu ricotta, nutritional yeast, garlic powder, onion powder, salt, and pepper. Stir until fully mixed.
  • Spread a thin layer of marinara sauce on the bottom of a baking dish.
  • Take each noodle and place a generous spoonful of the filling at one end. Roll it up carefully.
  • Place the rolled noodles in the baking dish seam side down.
  • Pour the remaining marinara sauce over the roll-ups, covering each roll completely.
  • Cover the dish with foil and bake for about 25 minutes.
  • Let the dish cool for a few minutes before serving.
  • Slice into portions and serve warm.

Notes

To store leftovers, let the roll-ups cool completely. Place them in an airtight container and refrigerate for up to four days, or freeze for later enjoyment.
