Ingredients
  

For the Meatballs

  • 1 cup lentils, cooked Cooked until tender for easy mashing.
  • ½ cup gluten-free breadcrumbs Ensure they are indeed gluten-free.
  • ¼ cup onion, finely chopped Adds flavor to the meatballs.
  • 2 cloves garlic, minced Enhances the flavor.
  • 1 tablespoon soy sauce Add coconut aminos if soy-free.
  • 1 teaspoon Italian seasoning For a flavor boost.
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon olive oil Used for cooking the gravy.

For the Gravy

  • 2 cups vegetable broth Vegetable stock for base flavor.
  • 2 tablespoons cornstarch To thicken the gravy.
  • 1 tablespoon nutritional yeast For a cheesy flavor.

Preparation

  • Begin by measuring out all ingredients. Ensure lentils are tender enough to mash.

Mixing Meatball Ingredients

  • In a mixing bowl, combine cooked lentils, gluten-free breadcrumbs, onion, garlic, soy sauce, Italian seasoning, salt, and pepper. Stir until fully combined.

Forming Meatballs

  • Roll a small amount of the mixture into balls, 1-2 inches in diameter, and place on a parchment-lined baking sheet.

Baking Meatballs

  • Preheat oven to 375°F (190°C) and bake meatballs for 25 minutes until golden brown.

Preparing Gravy

  • In a saucepan, heat olive oil. Add vegetable broth and bring to a simmer.

Thickening Gravy

  • Mix cornstarch with cold water until smooth. Add to simmering broth, stirring continuously to avoid lumps.

Adding Nutritional Yeast

  • Stir nutritional yeast into the thickened gravy and cook for a couple more minutes.

Serving

  • Once meatballs are done, place them on a platter and generously pour thickened gravy over them. Serve hot.

Notes

For spicier meatballs, add red pepper flakes. Customize with herbs as per your preference. Store meatballs and gravy separately to maintain freshness.
