Instructions
 

Preparation

  • Gather all your ingredients.
  • Peel and chop the pumpkin into manageable chunks.
  • Dice the onion and mince the garlic.

Cooking the Base

  • Heat a large pot over medium heat.
  • Add the diced onion and minced garlic. Sauté until soft and fragrant, about 5 minutes.

Add Pumpkin and Spices

  • Add the chopped pumpkin into the pot.
  • Sprinkle in the grated ginger and cumin. Stir and cook for about 5 minutes.

Pour Broth and Simmer

  • Pour in the vegetable broth and bring to a boil.
  • Reduce heat and let it simmer for about 20 minutes until the pumpkin is tender.

Blend and Finish

  • Blend the soup until smooth, using an immersion blender or transferring to a regular blender.
  • Stir in the coconut milk and season with salt and pepper to taste.

Notes

This soup can be made ahead of time and refrigerated for up to five days. It also freezes well for up to three months. When reheating, warm it on low heat to prevent sticking.
