Instructions
In a bowl, mash the cooked white beans until mostly smooth.
Add vital wheat gluten, nutritional yeast, and all seasonings. Mix to combine.
Pour in vegetable broth, soy sauce, and olive oil. Stir until a dough forms.
Knead the dough for 1–2 minutes until elastic. Do not over-knead or sausages become tough.
Divide into 6 portions, shape into logs, and wrap tightly in foil.
Steam for 40–45 minutes until firm.
Unwrap and pan-fry for extra crispiness, or cool and refrigerate for later use.
Notes
Add fennel seeds for an 'Italian sausage' flavor, or cayenne for a spicy variation.
