Ingredients
  

Base Ingredients

  • 1 cup cooked white beans mashed
  • 1 cup vital wheat gluten
  • 2 tbsp nutritional yeast

Liquid Ingredients

  • ¾ cup vegetable broth
  • 1 tbsp soy sauce or tamari
  • 1 tbsp olive oil

Seasonings

  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp dried thyme
  • ½ tsp black pepper

Instructions
 

  • In a bowl, mash the cooked white beans until mostly smooth.
  • Add vital wheat gluten, nutritional yeast, and all seasonings. Mix to combine.
  • Pour in vegetable broth, soy sauce, and olive oil. Stir until a dough forms.
  • Knead the dough for 1–2 minutes until elastic. Do not over-knead or sausages become tough.
  • Divide into 6 portions, shape into logs, and wrap tightly in foil.
  • Steam for 40–45 minutes until firm.
  • Unwrap and pan-fry for extra crispiness, or cool and refrigerate for later use.

Notes

Add fennel seeds for an 'Italian sausage' flavor, or cayenne for a spicy variation.
