Preparation

  • Gather all your ingredients and prepare them. Chop the onion, carrots, and celery, and cook your lentils according to the package instructions.

Cooking the Filling

  • In a large pan, heat a little olive oil over medium heat. Add the chopped onion and minced garlic, stirring until they become fragrant and translucent, about 3-4 minutes.
  • Add the diced carrots and celery to the pan and sauté for another 5-7 minutes until they're tender.
  • Stir in the cooked lentils, tomato paste, vegetable broth, thyme, and rosemary. Allow everything to simmer together for about 10 minutes.
  • Taste your mixture and season with salt and pepper as desired.

Assembly and Baking

  • Preheat your oven to 400°F (200°C). Spread the lentil mixture evenly into the bottom of a baking dish.
  • Spoon the mashed potatoes over the lentil mixture, spreading evenly and smoothing out the top.
  • Bake for 25-30 minutes or until the color of the mash is golden brown.
  • Let it cool for a few minutes before serving.

Notes

This vegan shepherd's pie is even tastier the next day. Perfect for meal prep and can be customized with seasonal vegetables.
