Ingredients
  

Filling

  • 2 cups fresh spinach Can use fresh or frozen spinach based on availability.
  • 1 cup vegan cheese Experiment with different types of vegan cheese.
  • 1 tablespoon olive oil Can substitute with avocado oil or coconut oil.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste none Salt and pepper Adjust seasoning according to preference.

Tortillas

  • 4 whole wheat tortillas Gluten-free tortillas can be used as a substitute.

Instructions
 

Preparation

  • Gather all your ingredients. Wash the spinach thoroughly and chop it into small pieces.

Mixing Filling

  • In a bowl, combine the chopped spinach with vegan cheese, garlic powder, onion powder, and salt and pepper. Stir until well mixed.

Cooking

  • Place a skillet over medium heat and add the olive oil. Heat until shimmering.
  • Lay one tortilla in the pan. Spread the spinach mixture over half of the tortilla.
  • Fold the tortilla over the filling and cook for about 3-4 minutes until golden brown.
  • Flip the quesadilla and cook the other side for another 3-4 minutes until crispy.
  • Remove from the pan and let it rest on a cutting board for a minute, then slice into wedges.
  • Repeat the process with the remaining tortillas and filling.

Serving

  • Serve the quesadillas warm with your favorite dips such as salsa or guacamole.

Notes

Avoid overfilling the quesadillas. Allowing cooked quesadillas to rest helps the filling set. Add nutritional yeast for extra flavor.
