Ingredients
  

Soup Base

  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 can crushed tomatoes 28 oz
  • 4 cups vegetable broth

Pasta & Seasonings

  • 1 cup small pasta like ditalini or small shells
  • 1 tsp dried basil
  • ½ tsp oregano
  • ¼ tsp black pepper
  • salt to taste

Optional Toppings

  • fresh basil chopped
  • vegan parmesan

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onions and sauté until soft.
  • Add garlic and cook for 1 minute until fragrant.
  • Stir in crushed tomatoes, vegetable broth, basil, oregano, salt, and pepper. Bring to a boil.
  • Add pasta and reduce heat to a simmer. Cook for 10–12 minutes, or until pasta is tender.
  • Adjust seasoning and add more broth if a thinner soup is desired.
  • Serve topped with fresh basil or vegan parmesan.

Notes

For extra creaminess, stir in a splash of coconut milk or cashew cream before serving.
