Instructions
Heat olive oil in a large pot over medium heat. Add onions and sauté until soft.
Add garlic and cook for 1 minute until fragrant.
Stir in crushed tomatoes, vegetable broth, basil, oregano, salt, and pepper. Bring to a boil.
Add pasta and reduce heat to a simmer. Cook for 10–12 minutes, or until pasta is tender.
Adjust seasoning and add more broth if a thinner soup is desired.
Serve topped with fresh basil or vegan parmesan.
Notes
For extra creaminess, stir in a splash of coconut milk or cashew cream before serving.
