Preparation

  • Gather all your ingredients and tools: a large skillet, a mixing bowl, and a spatula.
  • Peel, core, and dice the apples into 1-inch pieces.
  • In a large bowl, combine the diced apples, granulated sugar, brown sugar, cornstarch, cinnamon, and nutmeg (if using). Toss gently until coated.

Cooking

  • Place the coated apples and 1/4 cup of water into the skillet. Cook over medium heat, stirring occasionally for about 5 minutes until it simmers.
  • Reduce heat to medium-low, cover the skillet, and let cook for 5 to 7 minutes, stirring occasionally.
  • After 7 minutes, remove the lid, increase heat slightly, and stir frequently for an additional 5 to 10 minutes until the sauce thickens.
  • Stir in the unsalted butter and vanilla extract until the butter melts completely.
  • Serve warm with a scoop of vanilla ice cream.

Notes

Avoid overcooking the apples to retain texture. Adjust sugar based on apple sweetness. For extra flavor, sauté with lemon juice or add oats for a crumble-like texture.
