  • 4 cups watermelon, seedless and cubed
  • 1 cup whipped cream
  • ½ cup cream cheese, softened
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 pre-made pie crust (graham cracker or traditional)

Preparation

  • Begin by washing and cubing your watermelon. Make sure to remove all seeds if you're not using a seedless variety.
  • In a blender, combine the cubed watermelon and blend until smooth. If you prefer a thicker consistency, strain the mixture to remove excess juice. Set aside the watermelon puree for later use.
  • In a mixing bowl, use an electric mixer to beat the softened cream cheese until it’s smooth and creamy.
  • Add the whipped cream, powdered sugar, and vanilla extract to the cream cheese. Mix on low speed until the ingredients are well incorporated and smooth.
  • Gently fold the watermelon puree into the cream mixture using a spatula.

Assembly

  • Take your pre-made pie crust and place it on a serving dish.
  • Pour the watermelon and cream mixture into the prepared pie crust. Use a spatula to spread it evenly.
  • Cover the Watermelon Pie with plastic wrap and refrigerate for at least 2-3 hours, or until it is set.

Serving

  • Before serving, garnish the top of the pie with fresh mint leaves.
  • Slice the Watermelon Pie into wedges and serve chilled.

Notes

To take your Watermelon Pie to the next level, consider adding a squeeze of lime juice to the filling. For a vegan option, substitute with plant-based alternatives. Should be enjoyed freshly made for the best texture.
