Preparation

  • Gather all your ingredients and ensure cream cheese is softened to room temperature.
  • In a mixing bowl, add softened cream cheese, powdered sugar, and vanilla extract. Blend until smooth and creamy, about 2-3 minutes.
  • Fold in the chopped strawberries gently to maintain their shape.
  • Form small balls of the mixture, about one inch in diameter, and place on a baking sheet lined with parchment paper.
  • Freeze the bites for about 30 minutes to firm them up.
  • Melt the white chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals until fully melted.
  • Dip each frozen bite into the melted chocolate, allowing excess chocolate to drip off, then return to the baking sheet.
  • Roll the chocolate-coated bites in graham cracker crumbs and place back on the baking sheet.
  • Return to the fridge for an additional 30 minutes to set.
