White Chocolate Strawberry Truffles

Ingredients
  

Truffle Center

  • 8 oz white chocolate chips for the base of the truffle center
  • 4 tbsp unsalted butter softened
  • ¼ cup freeze-dried strawberry powder or finely crushed freeze-dried strawberries
  • ½ cup powdered sugar

Coating

  • 10 oz white chocolate melts or white chocolate chips for coating
  • extra freeze-dried strawberry dust or sprinkles (optional) for decoration

Instructions
 

  • Place the 8 oz white chocolate chips and softened butter in a microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until the chocolate and butter are melted and smooth.
  • Add the freeze-dried strawberry powder and powdered sugar, stirring until combined into a thick dough.
  • Scoop the mixture into small balls (about 1 tablespoon each) and roll between your palms. Place on a parchment-lined tray and freeze for 10–15 minutes to firm up.
  • Melt the remaining white chocolate melts in a microwave-safe bowl in 20-second bursts until smooth.
  • Dip each chilled truffle ball into the melted white chocolate, coat completely, and place back on the parchment paper. Sprinkle with extra strawberry dust or sprinkles if desired.
  • Allow the coating to set at room temperature or in the refrigerator until firm. Serve and enjoy.

Notes

These truffles keep well in an airtight container in the fridge for up to 1 week — or freeze for longer storage. You can use fresh strawberries reduced to powder if freeze-dried isn’t available.
