  • 1 cup wild rice
  • ½ cup dried cranberries Can be substituted with raisins or apples.
  • 2 cups vegetable broth Chicken broth can be used for extra flavor.
  • ¼ cup chopped pecans Can be omitted for a nut-free version.
  • ¼ cup diced onion Sauté for best flavor.
  • 1 tablespoon olive oil
  • to taste Salt Season gradually.

Preparation

  • Start by rinsing the wild rice under cold water.
  • In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-5 minutes.
  • Add the rinsed wild rice to the saucepan and stir until coated with oil and onion.
  • Pour in the vegetable broth and bring the mixture to a boil.
  • Once boiling, reduce the heat to low, cover the pan, and let simmer for about 45 minutes or until the rice is tender.
  • Stir in the dried cranberries and chopped pecans, allowing the flavors to meld.
  • Taste and season with salt as needed.
  • Remove from heat and let sit covered for about 5 minutes.
  • Fluff the rice with a fork before serving.

Notes

This dish can be made ahead and stored in the fridge for up to 4 days. It's perfect for meal prep. Can be frozen for up to 3 months.
