Ingredients
  

For the dough

  • 1 cup water
  • ½ cup unsalted butter
  • 1 cup all-purpose flour
  • ¼ teaspoon salt
  • 4 large eggs

For frying and serving

  • Oil for frying Oil for frying
  • Powdered sugar for dusting Powdered sugar for dusting
  • Optional Custard or jam for filling

Preparation

  • Start by gathering all your ingredients.
  • In a medium saucepan, combine the water and unsalted butter. Bring to a boil over medium heat.
  • Once boiling, remove from heat and add the flour and salt, stirring until a ball forms.
  • Allow dough to cool slightly for about 5-10 minutes.
  • Beat in the eggs one at a time until mixture is smooth and glossy.

Frying

  • Heat oil in a deep fryer or large pot to 375°F (190°C).
  • Carefully drop spoonfuls of batter into hot oil without overcrowding.
  • Fry until golden brown, approximately 4-5 minutes per batch.
  • Remove Zeppole with a slotted spoon and drain on paper towels.

Serving

  • Dust generously with powdered sugar or fill with custard or jam as desired.
  • Enjoy warm with your favorite beverages.

Notes

Store Zeppole in an airtight container at room temperature for 1-2 days, or refrigerate for up to 5 days. They can be frozen for up to 3 months.
