Ingredients
  

Main Ingredients

  • 2 whole sea bass cleaned and scaled
  • 2 lemons sliced
  • fresh thyme sprigs
  • 3 tbsp olive oil
  • salt and pepper to taste
  • 2 cloves garlic minced (optional)

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Clean and scale the sea bass thoroughly, then pat dry with paper towels.
  • Line a baking sheet with parchment paper and place the fish on it.
  • Drizzle olive oil over each fish, coating evenly.
  • Season generously with salt and pepper.
  • Stuff each cavity with lemon slices and fresh thyme sprigs. Add minced garlic if desired.
  • Roast the fish for 25–30 minutes, or until the flesh is opaque and flakes easily with a fork.
  • Remove from oven and serve immediately with extra lemon wedges and fresh thyme garnish.

Notes

For a Mediterranean twist, add capers or olives to the baking sheet. Serve with steamed vegetables or a light salad for a balanced meal. Use Meyer lemons for a slightly sweeter flavor.
