Ingredients

  • 2 cans Mexicorn (11 oz each) drained
  • 1 cup shredded cheddar cheese or Mexican blend
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 can diced green chilies (4 oz) mild or hot
  • ½ tsp chili powder
  • ¼ tsp cumin
  • ¼ tsp garlic powder

Toppings

  • ¼ cup chopped green onions for garnish
  • jalapeño slices optional for extra heat

Instructions
 

  • Preheat oven to 350°F (175°C) and lightly grease a small baking dish.
  • In a large mixing bowl, combine drained Mexicorn, shredded cheese, mayonnaise, sour cream, diced green chilies, chili powder, cumin, and garlic powder.
  • Mix until fully combined and creamy.
  • Spread the mixture evenly into the prepared baking dish.
  • Bake for 20 minutes or until the dip is hot and bubbly around the edges.
  • Remove from oven and top with chopped green onions and jalapeño slices if desired.
  • Serve warm with tortilla chips, crackers, or fresh veggies.

Notes

You can make this dip ahead of time and refrigerate until ready to bake. For an extra kick, stir in a dash of hot sauce or some pepper jack cheese.
