  • 1 lb Brussels sprouts trimmed and halved
  • 3 tbsp olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper freshly ground
  • 1 tsp lemon zest
  • ¼ cup Parmesan cheese optional, for garnish

Instructions
 

  • Trim and halve the Brussels sprouts, removing any yellow leaves.
  • In a bowl, whisk together olive oil, lemon juice, garlic powder, salt, pepper, and lemon zest to make the marinade.
  • Toss the Brussels sprouts in the marinade until evenly coated. Transfer to an airtight container and refrigerate overnight.
  • Preheat the oven to 400°F (200°C). Spread the marinated Brussels sprouts on a parchment-lined baking sheet in a single layer.
  • Roast for 20–25 minutes, flipping halfway through, until golden brown and crispy.
  • Optional: Sprinkle Parmesan cheese during the last 5 minutes of roasting for extra flavor.
  • Cool slightly and serve warm as a side dish or snack.

Notes

For a spicier version, add crushed red pepper flakes or sriracha to the marinade. Store leftovers in an airtight container for up to 4 days or freeze for up to 2 months.
