  • 2 large zucchinis Choose firm, fresh zucchinis.
  • 1 cup ricotta cheese Cream cheese or cottage cheese can be used as alternatives.
  • 1 cup shredded mozzarella cheese Any melty cheese can be substituted.
  • ½ cup grated Parmesan cheese Use nutritional yeast for a dairy-free option.
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning Can be replaced with fresh herbs.
  • to taste salt and pepper Essential for flavor.

Preparation

  • Preheat your oven to 375°F (190°C).
  • Slice the zucchinis lengthwise to create boats and scoop out some of the flesh.
  • In a mixing bowl, combine ricotta, half the mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  • Generously spoon the ricotta mixture into each zucchini boat.
  • Top with the remaining mozzarella cheese.
  • Arrange them on a lined baking sheet and bake for 25 to 30 minutes.
  • Check for doneness; zucchini should be tender and cheese bubbly.
  • Let them cool slightly, garnish with basil, and serve.

Notes

For best results, use fresh ingredients. Adjust spices and toppings as desired.
