Dry Ingredients

  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt

Wet Ingredients

  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Preparation

  • Gather all your ingredients and preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mixing Dry Ingredients

  • In a large mixing bowl, combine the all-purpose flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt. Mix well.

Mixing Wet Ingredients

  • Add the eggs, whole milk, vegetable oil, and vanilla extract to the dry mixture. Beat everything on medium speed for about 2 minutes.

Add Boiling Water

  • Carefully stir in the boiling water. The mixture will be thin; this is normal.

Baking

  • Pour the batter evenly into the prepared cake pans. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
  • Remove the cakes from the oven and let them cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Frosting

  • Once the cakes are cooled, frost and decorate as desired.

Notes

For a gluten-free version, replace all-purpose flour with gluten-free flour blend. For dairy-free options, use almond or oat milk. To reduce calories, substitute vegetable oil with unsweetened applesauce.
