  • 1 medium butternut squash, peeled and diced
  • 1 cup quinoa Rinsed to remove bitterness
  • 2 cups vegetable broth or water
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried herbs (like thyme or rosemary)
  • 1 tablespoon lemon juice (optional) Adds brightness

Preparation

  • Preheat your oven to 400°F (200°C).
  • Peel and dice the butternut squash into even cubes.

Cooking the Base

  • In a large mixing bowl, combine the diced butternut squash with olive oil, salt, and pepper. Toss well to coat.
  • Spread the seasoned squash on a baking sheet in a single layer.

Roasting

  • Roast in the preheated oven for about 25–30 minutes until tender and slightly golden.

Preparing the Quinoa

  • Rinse the quinoa under cold water to remove bitterness.
  • In a medium pot, combine the rinsed quinoa with vegetable broth or water.
  • Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.

Combining

  • Fluff the quinoa with a fork and stir in lemon juice if using.
  • Combine the roasted squash with the quinoa in a large bowl, gently tossing to meld the flavors together.

Serving

  • Taste and adjust seasoning if necessary.
  • Garnish with fresh herbs if desired and serve warm.

Notes

This dish is versatile and can be customized with additional proteins or vegetables. Store leftovers in an airtight container in the fridge for about 4 days, or freeze for up to 3 months.
