Ingredients
  

Dough

  • 500 g bread flour (or all-purpose)
  • 325 ml water (lukewarm)
  • 2 tsp instant yeast
  • 1 tsp sugar
  • 1 tsp salt

Toppings & sauce

  • 200 g cooked chicken (shredded or diced) seasoned (e.g. salt, pepper, herbs)
  • 1 cup tomato sauce or pizza sauce
  • 200 g mozzarella cheese (shredded)
  • olive oil (a drizzle)
  • dried oregano / basil (optional)

Instructions
 

  • In a bowl, combine water, yeast, and sugar. Let sit ~5 minutes until foamy.
  • Add flour and salt. Mix until a rough dough forms, then knead ~8-10 minutes until smooth and elastic.
  • Cover dough and let it rest/ferment until doubled in size (about 1 hour).
  • Preheat oven to highest temperature (e.g. 250-275 °C) with pizza stone or baking sheet inside.
  • Turn dough out, divide if making multiple pizzas, and stretch/roll to desired size.
  • Spread tomato or pizza sauce over the base, leaving a border around edges.
  • Scatter the cooked chicken over the sauce, then top with shredded mozzarella cheese and a drizzle of olive oil, and sprinkle oregano or basil if using.
  • Bake on the hot stone/sheet for 10-15 minutes or until the crust is golden and cheese is bubbling.
  • Remove from oven, let rest a couple of minutes, slice, and serve.

Notes

You can pre-season the chicken with garlic, herbs, or chili flakes for extra flavor. Using a hot pizza stone/steel helps get a crispy crust. If your oven isn’t very hot, bake longer on a lower rack. Leftovers reheat well in a skillet or oven to keep crust crisp.
