  • 1 cup black-eyed peas soaked overnight
  • 1 cup long-grain rice rinsed
  • 4 cups water or chicken broth
  • 1 onion chopped
  • 1 green bell pepper chopped
  • 2 cloves garlic minced
  • 1 smoked ham hock or andouille sausage optional, diced
  • salt and pepper to taste
  • red pepper flakes optional, for spice

Instructions
 

  • Rinse and soak the black-eyed peas overnight. Drain before cooking.
  • Heat a little oil in a large pot. Sauté onion, bell pepper, and garlic for 5–7 minutes until softened.
  • Add ham hock or sausage (if using) and cook for a few minutes to release flavors.
  • Stir in the black-eyed peas, water or broth, salt, pepper, and red pepper flakes. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 30 minutes until the peas are tender but not mushy.
  • Add the rice and stir well. Cover again and cook for 20–25 minutes until the rice absorbs the liquid and becomes tender.
  • Remove the ham hock, shred any meat, and return it to the pot. Mix gently.
  • Serve warm, garnished with chopped green onions or a sprinkle of red pepper flakes.

Notes

For a vegetarian version, omit the meat and use vegetable broth. Add smoked paprika for depth. Store leftovers in the fridge for up to 4 days or freeze for up to 3 months. Reheat gently with a splash of water or broth.
