  • 1.5 pounds boneless chicken thighs
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon paprika
  • to taste Kosher salt and black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 small shallot, minced
  • 3 cloves garlic, minced
  • 0.5 cup chicken broth
  • 1 tablespoon fresh lemon juice
  • 2 sprigs fresh thyme
  • 0.25 teaspoon crushed red pepper flakes
  • 0.33 cup heavy cream
  • Freshly chopped parsley, for garnish

Preparation

  • Gather all your ingredients and tools, including a large cast iron skillet and measuring spoons. Have a paper towel ready.
  • Pat the boneless chicken thighs dry with a paper towel. In a small bowl, mix garlic powder, onion powder, paprika, salt, and black pepper. Rub this seasoning generously over both sides of the chicken thighs.

Cooking

  • Heat a large skillet over medium heat and add olive oil. Once hot, place the chicken thighs skin side down in the skillet and sear for about 5 minutes until crispy and golden brown. Flip and cook for another 8-10 minutes until the internal temperature reaches 165°F (74°C). Transfer the chicken to a plate.
  • In the same skillet, add butter, shallot, and minced garlic. Sauté for about 1 minute until fragrant.
  • Pour in chicken broth and fresh lemon juice, scraping up any bits stuck to the pan. Add fresh thyme and crushed red pepper flakes.
  • Reduce heat to low and stir in heavy cream. Let the sauce simmer gently for about 5 minutes to thicken.
  • Return the chicken to the skillet, allowing them to soak in the creamy sauce for a couple of minutes.

Serving

  • Remove from heat, garnish with freshly chopped parsley, and serve the chicken warm with the creamy sauce poured over.
  • Pair with your favorite side dishes for a wonderful meal.

Notes

For dietary adjustments, use coconut cream for dairy-free options, and ensure that all added ingredients are gluten-free if necessary.
