  • 200 g pitted dates, chopped Ensure dates are pitted and chopped for even soaking.
  • 250 ml boiling water Used to soften the dates.
  • 2 medium apples, peeled, cored, and diced Choose your favorite apples for sweetness.
  • 100 g unsalted butter, softened Room temperature for easy creaming.
  • 150 g brown sugar, packed Can be replaced with honey or maple syrup.
  • 2 large eggs Use room temperature eggs for better mixing.
  • 1 teaspoon vanilla extract Enhances the flavor.
  • 200 g all-purpose flour Can substitute with gluten-free flour.
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon For warmth and flavor.
  • 100 ml milk Can be replaced with plant-based milk.

Instructions
 

Preparation

  • Gather all your ingredients. Chop the pitted dates into small pieces.
  • Peel, core, and dice the apples into bite-sized pieces.
  • In a bowl, add the chopped dates and pour the boiling water over them. Allow to soak for about 15 minutes.

Mixing

  • Mash the soaked dates slightly to create a chunky paste.
  • Cream the softened butter and brown sugar together until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet mixture, alternating with the milk.
  • Fold in the diced apples and the mashed date mixture.

Baking

  • Pour the batter into a prepared 8-inch round cake pan and smooth the top.
  • Bake in a preheated oven at 180°C (350°F) for 30-35 minutes until a toothpick inserted comes out clean.
  • Remove the cake and cool it in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For a richer flavor, add a pinch of nutmeg. This cake pairs well with vanilla ice cream or caramel sauce.
